Description
Boiled crawfish is a favorite with both Cajuns and Creoles. It is usually cooked outdoors over propane burners in large pots big enough to boil 25-50 pounds of crawfish at a time. The crawfish are often served on a table covered with layers of newspaper. This is done to make clean-up quick and easy. Crawfish is often boiled with potatoes, corn, onions, sausage, lemon, cayenne pepper, salt, and other seasonings.
