Nothing excited the children of Acadiana more than seeing these crawfish holes pop up in our yard when I was a child. I loved crawfishing. My mama would help me tie a string to a little piece of meat. Then we would tie the other end of the string to a stick. I would drop the meat into the hole so that it dangled down not quite touching the bottom so that I could tell if the crawfish was trying to eat the meat. We kids crawfished in holes while our Dads crawfished with nets in pounds nearby. We knew that in the afternoon we would have a crawfish boil. Nothing makes a Louisiana kid happier than a belly full of boiled crawfish.
Crawfish dig holes about an inch to two inches across and about six inches deep. They form the dirt they extract from the holes into little mud balls. As they form the balls they place them around the hole forming a tube that extends 6-10 inches above the hole.
I am a Cajun-Creole grandmother who was raised in South Central Louisiana and I am trying to preserve my culture as well as the things I imagine.
