My Cajun Maw-Maw had black and white hens like this that she called "Zanga." Their eggs were dark brown and their yolks a golden yellow. Their rich flavor could not be compared to store bought cage eggs.
In school one day my teacher read us a story about a hen who layer golden eggs for a poor old lady. After reading the page she would turn the book so we could see the pictures on the page. I kept waiting to see the hen with beautiful golden eggs. One picture had several hens on nest. There were lots of hens on white eggs. One hen was on a nest with beautiful country eggs or at least that is what color they looked to me. The story went on to tell that the king found out about the golden egg and he sent people to the farm to try to buy the hen but the old lady loved her hen. Instead she sent a golden egg. The king ate the golden egg and wanted more eggs. This time he went to the old lady's house himself but when he saw how much she loved the hen the king knew he didn't have enough gold to buy the hen. He offered the old lady a beautiful home near the castle and lots of beautiful clothes and fine food if she would send him a golden egg each day. Well I waited till the end of the story to say something and that was hard but I had already been to the principal's office for interrupting the teacher's story time so I waited. After she was done with the story and all the other kids had said what they had to say I raised my hand and told my teacher about my Maw-Maw's hen that layer Country Eggs and how the eggs in that book didn't look gold at all. I told her about my Daddy who painted a lot. One thing he loved to paint was statues. He even painted the angel statue in church once. When the angel statue on the altar was accidentally knocked over by an altar boy who tripped. One of the angels fell and broke her golden wings. Daddy was careful to use 14 carot gold to paint her wings. I remember him telling me that it was 14 carot gold. I thought ,"This is NOT carrot gold, this is wedding band gold." I told her that king sure wasted his money on that fancy house cause he could have gotten country eggs from my Maw-Maw that was just as "gold" as the hen in the books eggs and my Maw-Maw just charged 50 cents a dozen. I told her that if that old king was a smart king he would of put one of them country eggs under his nesting hens and he would have had a chick that would grow up to lay golden eggs that weren't really golden but was just khaki colored country eggs. The teacher told me I talked to much and ruined the whole story for her class cause some of the girls were crying after I pointed out the hen's eggs was the same color as the boy in our class' khaki pants and NOT the same color as the teacher's wedding band. She told me I should paint a hen with golden eggs if I knew so much about gold but only after sending me to the principal's office. I am not sure why the principal laughed so hard at me but he made me promise I would tell the teacher he gave me a spanking instead of the red sucker he gave me. He told me I should be a teacher one day then I might understand why my teacher got so upset by my long stories. Well I took both their advise and I am an artist who taught my children and grandchildren their colors. I painted this hen with golden brown country eggs. I think these eggs speak highly of the rich flavor of the country eggs.
